UPdate December 1999 (Winter 2000)
3/4 cup kamut flour (can use 2 tbsp kamut flakes in place of 2 tbsp flour)
1/2 to 3/4 tsp baking powder (corn free)
1/4 tsp salt
2 tbsp oil - canola or grape seed
1/2 cup water
seasoning of choice: 1) 1/4 tsp lemon grass + 1 tbsp lemon juice substituted for a tbsp water
2) 2tbsp sesame seeds
3) your choice.
Mix all ingredients together. Kneed 30 seconds. Roll between 2 pieces of wax paper. Cut into 2x2 inch squares. Transfer to an ungreased cookie sheet. Bake at 425F. for 15 minutes until just browned, turning pan once for even browning. (An air-bake cookie sheet works really well for crackers.)
